Christmas Lima Bean
A unique variation on the classic lima, this Rancho Gordo bean offers a rich, velvety texture and an almost nutty flavora true revelation for those who believe they don't like Limas.
Christmas Limas, also known as Chestnut or Calico beans, are a flavorful heirloom variety originally from Peru. In Italy, theyre called Fagioli del Papa, or Popes beans. Meaty and full-bodied with a chestnut-like texture, theyre big, bold, and delicious in chili, curry, or simply drizzled with olive oil and a sprinkle of cheese.

Latin name: haseolus natus
Use eck beans for debris, and rinse thoroughly. In a large pot, saut aromatic vegetables in olive oil. Add beans and enough water to cover by about 2 inches. Bring to a full boil for 10 to 15 minutes.
Reduce heat to a gentle simmer, using a lid to help regulate the heat, and gently cook until done, 1 to 3 hours. Salt when the beans start to soften. A pre-soak of 2 to 6 hours will lessen the cooking time.
